
Vegan Tuna Crispy Rice Bites

These Vegan Tuna Crispy Rice Bites are simple to make, and even easier to eat. We’ve topped our crispy rice with avocado, vegan tuna and hot sauce but why not try teriyaki marinated tofu and pickled ginger next time?Time and servings

Ingredients
- 200g cooked sushi rice
- 1 tbsp groundnut or vegetable oil
- ½ avocado, thinly sliced
- 100g OmniTuna Plant Based Tuna Flakes in Mayo
- 1 salad onion, finely sliced
- 1 small jalapeno, sliced
- 2 tsp sriracha
- ½ tsp black and white sesame seeds
Method
Step 1
Divide the rice into 8 pieces and shape into balls then squash in the pan to make patties, or flatten into a rectangle about 1 in thick and cut into 8 rectangles.Step 2
Heat the oil in the pan over a high heat and fry the rice for about 4-5 mins on each side until golden and crisp. If you want the rice less crisp, only fry on one side.Step 3
Top with a few slices of avocado then a spoonful of omni tuna in mayo.Step 4
Top with salad onion, sliced jalapeno, a drizzle of sriracha and a sprinkle of sesame seeds to serve.
