This scrumptious sauce is a vegan take on the classic bolognese recipe. I dare you to try it and not fall in love with its hearty, delicious flavour!Time and servings

Ingredients
- 1 pack of meat free mince
- 250 ml of tomato puree
- 30 g of margarine
- 1 large onion, skinned and chopped
- 2 carrots, peeled and chopped
- 2 sticks of celery, scrubbed and chopped
- 2 tbsp of tomato paste
- 550 ml of vegetable stock
- 5 ml of basil, plus a sprinkle to garnish
- 500 g of cooked spaghetti
- 1 pack of peppers, to garnish
Method
Step 1
Make the sauce first.Step 2
Fry the onion, carrot and celery until lightly browned.Step 3
Add the tomato paste, tomato puree and basil and allow to simmer for a few minutes before adding the stock, salt and pepper.Step 4
Cover and simmer for 10-15 minutes.Step 5
Cook mince separately according to the instructions on the box and then add to the tomato mix.Step 6
Re-season if necessary.Step 7
Serve on top of spaghetti with basil.
