Ingredients
- 1 pack of meat free mince
- 1 pack of tortilla, (4 tortillas)
- 1 can of red kidney beans, drained
- 1 tub of sour cream, to serve
- 1 can of diced tomatoes
- 1 pack of tomato salsa
- 1 pack of fresh coriander, to serve
- 1 splash of olive oil
- 0.5 onion, chopped
- 1 large avocado, sliced
Method
Step 1
Heat a little bit of olive oil in a pan and fry the onion.Step 2
When onions are golden add the can of diced tomatoes and reduce heat.Step 3
Simmer for a few minutes and then add the red kidney beans, cook for a further minute and then take off the heat.Step 4
In another pan cook meat free mince according to the instructions (gravy sachet is optional).Step 5
Combine tomato mixture with meat free mince in a large bowl.Step 6
Spoon mixture into warmed tortillas and serve with avocado, salsa, fresh coriander and a dollop of sour cream.
