Ingredients

  • 100 g of rice noodles
  • 0.5 carrot, cut into batons
  • 0.25 mango, shaved
  • 8 leaves of mint, shredded
  • 2 sprigs of coriander, chopped
  • 4 spring roll wrappers
  • 1 tbsp of sweet chilli sauce

Method

  • Step 1

    Dip the rice paper wrappers in warm water for a few seconds to soften.
  • Step 2

    Handling them carefully, lay the rice noodles, carrot, mango, coriander and mint down the centre of each wrap and top with chilli sauce.
  • Step 3

    Fold the top and bottom over the filling then fold down the edges towards the centre and roll until snug and sealed.
