
Vegetarian Summer Rolls

Ingredients
- 100 g of rice noodles
- 0.5 carrot, cut into batons
- 0.25 mango, shaved
- 8 leaves of mint, shredded
- 2 sprigs of coriander, chopped
- 4 spring roll wrappers
- 1 tbsp of sweet chilli sauce
Method
Step 1
Dip the rice paper wrappers in warm water for a few seconds to soften.Step 2
Handling them carefully, lay the rice noodles, carrot, mango, coriander and mint down the centre of each wrap and top with chilli sauce.Step 3
Fold the top and bottom over the filling then fold down the edges towards the centre and roll until snug and sealed.
