
Veggie Sausage Traybake

This sausage traybake is simple and delicious, all cooked in one pan it makes an easy midweek dinner. This uses red onions and peppers, but why not try with courgettes and sweet potatoes next time? Cooked until the sausages are golden and veggies are tender, a new family favourite.Time and servings

Ingredients
- 2 red onions, cut to wedges
- 1 red pepper, cut to bite size pieces
- 1 green pepper, cut to bite size pieces
- 500g new potatoes, halved if large
- 3 tbsp olive oil
- 4 large tomatoes, quartered
- 8 Richmond Meat Free Sausages
Method
Step 1
Heat the oven to 180°C / 160°C fan/ gas 4. Spread the onion, peppers and potatoes over the base of a roasting tin then drizzle with oil and toss to coat. Season well then roast for 30 mins.Step 2
Remove from the oven, add the tomatoes and sausages then shake a little so everything fits. Return to the oven and cook for 15-18 mins more, until the sausages are golden and cooked throughStep 3
Serve with your favourite sauce.
