Vibrant crunchy bean salad with toasted seeds

Super-fresh beans and toasty nuts for double the crunch. Dress just before serving.

Ingredients

  • 600 g of fresh beans, such as green beans, mangetout and sugar snap peas
  • 50 g of mixed seeds
  • 1 tsp of soy sauce
  • 1 shallot, finely chopped, for the dressing
  • 1 tsp of honey, for the dressing
  • 1 tsp of dijon mustard, for the dressing
  • 1 clove of garlic, crushed, for the dressing
  • 1 tbsp of white wine vinegar, for the dressing
  • 3 tbsp of extra virgin olive oil, for the dressing

Method

  • Step 1

    Mix the dressing ingredients together and set aside.
  • Step 2

    Blanch the beans for 2-3 mins in boiling, salted water. Drain and refresh in cold water, drain again and tip into a dish.
  • Step 3

    Toast the seeds for 2-3 mins in a large pan, until fragrant and golden. Add the soy sauce and shake the pan to coat the seeds, then turn off the heat.
  • Step 4

    Toss the dressing and seeds into the beans and serve.
