
Vibrant crunchy bean salad with toasted seeds

Ingredients
- 600 g of fresh beans, such as green beans, mangetout and sugar snap peas
- 50 g of mixed seeds
- 1 tsp of soy sauce
- 1 shallot, finely chopped, for the dressing
- 1 tsp of honey, for the dressing
- 1 tsp of dijon mustard, for the dressing
- 1 clove of garlic, crushed, for the dressing
- 1 tbsp of white wine vinegar, for the dressing
- 3 tbsp of extra virgin olive oil, for the dressing
Method
Step 1
Mix the dressing ingredients together and set aside.Step 2
Blanch the beans for 2-3 mins in boiling, salted water. Drain and refresh in cold water, drain again and tip into a dish.Step 3
Toast the seeds for 2-3 mins in a large pan, until fragrant and golden. Add the soy sauce and shake the pan to coat the seeds, then turn off the heat.Step 4
Toss the dressing and seeds into the beans and serve.
