
Vietnamese Spring Rolls

Vietnamese Spring Rolls, also known as summer rolls as they are not deep-fried, so are fresh, quick and easy to make. They are an ideal alternative to sandwiches for a packed lunch or as a cool summertime appetizer. Ingredients
- 1 carrot, grated
- 50 g of beansprouts
- 5 cm of cucumber, shredded
- 1 tbsp of fish sauce
- 1 tbsp of white rice vinegar
- 2 tsp of caster sugar
- 8 blue dragon spring roll wrappers
- 1 handful of fresh mint leaves, stems removed
- 1 handful of fresh coriander, chopped
Method
Step 1
Mix the vegetables with the fish sauce, white rice vinegar, sugar and a handful of coriander.Step 2
Dip the spring roll wrappers one at a time in warm water for 8-10 seconds, until soft and pliable and place on a damp tea towle to dry off slightly.Step 3
Place a small mint leaf in the centre of each wrapper, add the vegetable filling and roll up, folding the side closest to you over first. Then pull the sides together like an envelope and then roll the parcel away from you until a neat roll is formed.Step 4
Serve with sweet chilli dipping sauce.
