
Walnut & Rocket Pesto

Whip up this peppery and punchy seasonal pesto in under 10 minutes. Toasted walnuts are used for extra flavour – gently fry them in a dry pan for a few minutes until they become aromatic and are just starting to colour. Pair this simple sauce with gnocchi or pasta for an authentic taste of Italy.Time and servings

Ingredients
- 70 g of rocket
- 90 ml of extra virgin olive oil
- 55 g of walnuts, toasted for extra flavour
- 40 g of parmesan, grated
- 1 clove of garlic, chopped
- 500 g of gnocchi, to serve (optional)
- 40 ml of walnut oil
Method
Step 1
In a blender, whizz together the rocket, walnuts (toasted for extra flavour), parmesan, garlic, olive oil and walnut oil until it combines to form a smooth consistency. Add water to thin as needed, and season to taste.Step 2
Serve with gnocchi, your choice of pasta, on toast, spooned over a baked sweet potato, or transfer into an airtight container and chill until needed. This will keep for up to five days in the fridge.
