
Warm and Spicy Charred Aubergine Salad

This will serve four as a starter, but also makes a great side dish at a barbecue.Time and servings

Ingredients
- 4 baby aubergines, thinly sliced (a mandoline works best) and cut into 2cm strips
- 4 tbsp of sesame oil, 2 tbsp for the aubergine, 2 tbsp for the dressing
- 75 g of peanuts, crushed, for the dressing
- 3 shallots, thinly chopped, for the dressing
- 1 tbsp of soy sauce, for the dressing
- 3 spring onions, finely sliced
- 1 medium carrot, carrot
- 1 lime, juiced
- 1 small handful flat leaf parsley
- 3 chillies, finely chopped, 1 for the aubergine, 2 to make the dressing
Method
Step 1
Make the dressing: heat the oil, add the dressing ingredients and saute for 1-2 minutes.Step 2
Fry the aubergine and chilli in 2 tbsp sesame oil over a high heat, turning the strips constantly until charred (around 5 minutes).Step 3
Make the salad: lightly toss the parsley, spring onion and carrot and divide onto 4 plates. Top with the warm auvergine, spoon on the dressing and finish with a squeeze of lime.
