
Warm Bacon and Avocado Salad with Dijon Dressing

Ingredients
- 2 tbsp of olive oil
- 2 tbsp of pine nuts, toasted
- 4 tomatoes, small, quartered
- 1 tsp of maille dijon mustard
- 1 avocado, stoned
- 1 gem lettuce
- 4 rashers of unsalted back bacon
- 1 tbsp of red wine vinegar
- 1 tsp of maille wholegrain mustard
Method
Step 1
Fry the bacon until crisp. Add the tomatoes, vinegar, oil and mustard and leave to simmer for a couple of minutes.Step 2
Divide the remaining ingredients between the plates, sprinkle with toasted pine nuts and pour over the warm dressing. Serve immediately.
