Ingredients
- 3 tbsp of olive oil
- 250 g of closed cup mushrooms, halved
- 1 garlic clove, crushed
- 0.5 lemon, juiced
- 1 romaine lettuce, shredded
- 175 g of cherry tomatoes, halved
- 0.5 cucumber, desseded and diced
- 1 red onion, chopped
- 75 g of pitted olives
- 100 g of feta cheese, crumbled
Method
Step 1
Heat the oil in a large frying pan, add the mushrooms and saute over a high heat for 5 minutes, stirring occasionally until pale golden. Add the garlic, thyme and lemon juice and season to taste. Stir well, then remove from the heat.Step 2
Arrange the lettuce in a large bowl, scatter over the remaining ingredients, then add the mushrooms and all the pan juices. Toss to mix and serve with crusty bread.
