
Watercress & blue cheese frittata

Ingredients
- 8 eggs
- 75 g of blue cheese
- 4 spring onions, chopped
- 3 tbsp of milk
- 20 g of butter
- 100 g of watercress, washed, coarse stems removed and very roughly chopped
Method
Step 1
Preheat grill to a medium heat. In a large bowl, beat the eggs and milk, and season well.Step 2
Melt the butter in a non-stick frying pan over a gentle heat. Add the spring onions and fry gently for 2 mins, then add the watercress and continue to cook for another 1 min.Step 3
Carefully pour in the egg mixture. Crumble over the blue cheese and turn the temperature up to medium and cook for 4-5 mins or until the base is set.Step 4
Transfer the pan to under the grill and cook for a further 4-5 mins, or until the top is set and has started to turn golden.Step 5
Leave to cool in the pan for a few mins, then turn out on to a board. Chop into slices and serve with a mixed leaf salad.
