Ingredients
- 2 large oranges, zested, then segmented over a bowl to catch any juice
- 20ml white wine vinegar
- 40ml extra-virgin olive oil
- ½ garlic clove, crushed or grated
- 1 tsp runny honey
- 2 (80g) bags watercress
- 1 large ripe avocado, sliced
- 75g goat’s cheese, crumbled
- 30g mixed seeds, toasted
Method
Step 1
In a bowl, whisk the reserved orange juice with the vinegar, oil, garlic and honey. Season with salt.Step 2
Put the watercress, avocado, goat’s cheese and mixed seeds in a bowl and gently toss to combine. Pour over the dressing and serve.
