There’s a punch revival happening and we’re here for it! This Watermelon, Chilli and Mint Punch, from cocktail expert Carmen O’Neal, combines chilli heat with fruitiness. Plus, the watermelon shell turns into a punch bowl. What’s not to love?

Ingredients

  • 1 baby watermelon
  • 20 mint leaves, plus extra to garnish
  • 1½ tbsp honey
  • 2.5 cm piece chilli, deseeded if preferred
  • 1 (approx.) medium lime, juiced to give 35ml
  • 100ml vodka (optional)

Method

  • Step 1

    Slice the top off the watermelon and scoop out the flesh. Reserve the shell in the fridge.
  • Step 2

    In a blender, blitz the watermelon flesh with the mint, honey, chilli, lime juice, vodka (if using) and 3 handfuls of ice until smooth. Chill until needed.
  • Step 3

    To serve, pour the punch into the watermelon shell and ladle into glasses over ice. Garnish with more mint.
