Ingredients
- 1 baby watermelon
- 20 mint leaves, plus extra to garnish
- 1½ tbsp honey
- 2.5 cm piece chilli, deseeded if preferred
- 1 (approx.) medium lime, juiced to give 35ml
- 100ml vodka (optional)
Method
Step 1
Slice the top off the watermelon and scoop out the flesh. Reserve the shell in the fridge.Step 2
In a blender, blitz the watermelon flesh with the mint, honey, chilli, lime juice, vodka (if using) and 3 handfuls of ice until smooth. Chill until needed.Step 3
To serve, pour the punch into the watermelon shell and ladle into glasses over ice. Garnish with more mint.
