
Watermelon, Hibiscus and Lime Lollies

Refreshing watermelon buddies up with tangy lime and hibiscus in these simple Watermelon, Hibiscus and Lime Lollies from chef and head of Ottolenghi Test Kitchen Milli Taylor. “These are a wonderful thirst quencher on hot afternoons. The recipe makes around 6 lollies, depending on the size of your moulds, and it’s simple to scale up so you can always have a few on standby in the freezer.” Allow at least an extra 4 hours for freezing.

Ingredients
- 600g watermelon flesh, roughly chopped
- 6 tbsp hibiscus syrup
- 2 limes, juiced
- 1 small pinch sea salt
- 1 small pinch Aleppo chilli flakes (optional)
Method
Step 1
In a blender or food processor, blitz the watermelon with the syrup, lime juice and salt.Step 2
Strain through a sieve into a jug, then pour into your lolly moulds, leaving a small gap at the top for the mix to expand during freezing. Pop the sticks into the moulds, seal and freeze for at least 4 hrs. Sprinkle with the chilli flakes when serving, if liked.
