Weetabix Breaded Chicken

This gives it a real crunch that contrasts so well with the texture of the chicken itself. It’s a great meal to opt for if you’re pressed for time as creating the coating takes moments and then you just pop it in the oven for 25 minutes or so. Ingredients

  • 25 g of breadcrumbs
  • 1.5 weetabix, crushed
  • 2 tbsp of light mayonnaise
  • 2 skinless chicken breasts

Method

  • Step 1

    Preheat the oven to 220°C/200°C fan/gas 7. Put the mayonnaise in a bowl with the chicken and stir well to coat.

  • Step 2

    Mix the breadcrumbs and Weetabix with some seasoning. Tip onto a plate and use the crumbs to coat the chicken.

  • Step 3

    Put the chicken on a baking tray and bake for approximately 25 mins or until cooked. Then serve with salad, if you like
