Have you had your Weetabix cake? Not yet? Well, now is a good time to add this to your cake repertoire. Using two Weetabix and milk (obvs), as well as more usual cake ingredients, such as self-raising flour and eggs, it also happens to be very simple to make. Ingredients
- 2 weetabix
- 200 ml of semi-skimmed milk
- 100 g of sultanas
- 100 g of self-raising flour
- 1 tsp of ground mixed spice
- 2 tsp of canderel original low-calorie sweetener powder or 180g sugar
- 2 large eggs
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas 4 and line a loaf tin with non-stick baking paper.Step 2
Put the Weetabix in a large bowl and pour in the milk. Let them get soggy for 2-3 mins, then mash with a fork.Step 3
Whisk in the sultanas, self-raising flour, mixed spice, sweetener and eggs, then spoon the mixture into the prepared loaf tin and bake for 1 hour.Step 4
Let the cake cool on a wire rack before adding your favourite toppings.
