Ingredients

  • 1 tbsp unsalted butter
  • 1 tbsp plain white flour
  • 100ml ale (or use dry cider)
  • 130g lighter mature cheddar, grated
  • 1 tbsp english mustard
  • 1 tsp worcestershire sauce
  • 2 slices sourdough
  • 2 pears, ripened and thinly sliced
  • 1 handful chives (optional)

Method

  • Step 1

    In a saucepan, melt the butter until bubbling, then spoon in the flour. Cook, stirring constantly, for 1 min. Gradually whisk in the ale a little at a time to make a sauce.
  • Step 2

    Beat in the cheese, mustard and worcestershire sauce until thickened, and let it bubble for a minute or two.
  • Step 3

    Meanwhile, preheat the grill to high. Lightly toast the sourdough; transfer to a baking sheet. Spread a little of the cheesy sauce over the toast, top with the pear slices, then spoon a little more sauce over the pears. Grill for 30 secs-1 min or until bubbling and starting to brown. Snip over the chives, if using, and serve immediately.
