
Welsh Rarebit with Pears

Ingredients
- 1 tbsp unsalted butter
- 1 tbsp plain white flour
- 100ml ale (or use dry cider)
- 130g lighter mature cheddar, grated
- 1 tbsp english mustard
- 1 tsp worcestershire sauce
- 2 slices sourdough
- 2 pears, ripened and thinly sliced
- 1 handful chives (optional)
Method
Step 1
In a saucepan, melt the butter until bubbling, then spoon in the flour. Cook, stirring constantly, for 1 min. Gradually whisk in the ale a little at a time to make a sauce.Step 2
Beat in the cheese, mustard and worcestershire sauce until thickened, and let it bubble for a minute or two.Step 3
Meanwhile, preheat the grill to high. Lightly toast the sourdough; transfer to a baking sheet. Spread a little of the cheesy sauce over the toast, top with the pear slices, then spoon a little more sauce over the pears. Grill for 30 secs-1 min or until bubbling and starting to brown. Snip over the chives, if using, and serve immediately.
