Ingredients
- 1 lemon
- 50 g of caster sugar
- 50 ml of no.3 london dry gin
- 15 ml of cointreau
- 1 egg white, or 15ml chickpea water drained from the tin or Oggs Aquafaba, if vegan
Method
Step 1
Chill a coupe or martini glass in the fridge or freezer. Peel one long strip of zest from the lemon; juice the lemon and set aside.Step 2
Stir the sugar with 25ml hot water until dissolved, to make a syrup. Set aside.Step 3
Put 35ml lemon juice, the sugar syrup, gin, Cointreau and egg white or vegan alternative into a cocktail shaker. Shake for 15 secs. Add ice cubes and shake hard for 20-30 secs. Strain into the chilled glass.Step 4
Fold the lemon zest skin-side over the glass to express the oil; then twist and place over the rim.Step 5
