
Wild Mushroom and ‘Nduja Salami Pasta

It goes without saying that a selection of nutty, earthy mushrooms is simply the perfect match for a traditional soft and spicy Italian salami, and that’s exactly what our wild mushroom and ‘nduja pasta combine together.
This ‘nduja mushroom pasta is layered with distinctive and unique flavours that will have everyone coming back for seconds, and it couldn't be easier to put together. Ideal for anyone in need of a quick and healthy meal after a busy day, we recommend using casarecce pasta.Time and servings

Ingredients
- 300 g of mushrooms
- 2 cloves of garlic, sliced
- 150 g of nduja
- 1 handful of parmesan, grated
- 300 g of pasta
- 3 tbsp of butter
- 1 handful of basil leaves, shredded
Method
Step 1
Bring a pan of water to the boil and cook the pasta according to the pack instructions.Step 2
Heat the butter in a frying pan and cook the girolles over a medium heat for 5-10 mins until softened (tear up any larger ones). Stir in the garlic and cook for 2 mins, then add the nduja with a splash of the pasta water to make the sauce.Step 3
When it's ready, drain the pasta, reserving some of the cooking liquid. Add the pasta to the pan with the spicy mushroom mixture and toss together, adding a little more of the pasta water if needed. Divide between bowls and top with parmesan and basil.
