Packed with flavour, this veggie Za’atar Spiced Halloumi and Chickpea Traybake from chef Esther Clarke combines salty halloumi with zesty za’atar and sharp pickled chillies. It’s a speedy, simple and delicious midweek meal, and a handy prep-ahead dish to have on standby in the freezer: just pile everything into a freezer-safe container, ready to defrost overnight in the fridge ,and then decant into a roasting tin to bake (season it just before cooking). Ingredients
- 2 (250g) blocks reduced-fat halloumi, cut into large cubes
- 1 onion, thinly sliced
- 2 heaped tbsp za’atar
- 8 long green pickled chillies, chopped (optional)
- 180g cherry tomatoes, halved
- 2 (400g) tins chickpeas, drained and rinsed
- 3 tbsp olive oil
- 4 flatbreads (optional)
- 1 bag green salad (optional)
- 2 tbsp (approx.) Greek-style yoghurt (optional)
- 1 tbsp (approx.) chopped dill or mint (optional)
- 1 lemon, cut into wedges (optional)
Method
Step 1
Preheat the oven to 220°C/200°C fan/gas 7.Step 2
Put the halloumi into a roasting tin with the onion, za’atar, chillies (if using), cherry tomatoes, chickpeas and olive oil. Stir to coat everything in the oil and season well. Bake for 30 mins until cooked through and golden.Step 3
If you like, serve with flatbreads and salad, drizzled with yoghurt and topped with chopped dill or mint, plus wedges of lemon for squeezing.
