The pyramid shaped Buckwheat seed is not a type of wheat - it is in fact related to the rhubard family of plants. Buckwheat has been cultivated in South East Asia and Tibet for centuries. It is naturally gluten free.

Preparation and Usage
100g buckwheat flour
1 vegan egg (flax/chia)
300ml water or your choice of milk
A pinch of salt
Preparation
Put the flour, salt, egg and half the liquid into a bowl. Mix well to a smooth paste then stir in the remaining liquid. Refrigerate for 30mins - 1hr. Heat an oiled pan - medium heat. Ladle the batter into the pan and spread thinly, sauté until the base is golden then flip the galette and cook the other side. Repeat until the batter is used. Serve with your favourite filling.

Not sure
I am a pro buckwheat pancake baker and favour the Rude Health brand. Although these created a golden luscious looking pancake , they tasted rather bland with an after taste of cardboard! Cannot wait until Rude Health is back in stock. Each to their own I know!
horrible for making pizza
I tried to make pizza with this based off a recipe off the internet. It had this very strange off putting smell to I didn't enjoy it at all.

Used to be delicious. Now grainy and horrible. Shame.
TONS OF BLACK BITS!
This used to be great flour. My past 3 orders have had thousands of black bits in. Tried using and tasted VERY grainy and unedible. A real shame.
