Rich, dense and fruity, this is a Christmas cake in the best tradition. Top up the booze as much you like (or dare!). As ingredients, I’ve gone for Columbian Blacktail eggs because they really add to that richness; Marriage’s extra fine self-raising flour – you’ll find it hard to beat their quality; and Dr Oetker Ready to Roll icing, as it’s just so much easier than making your own!
Muhummara is a middle eastern dip made from a specific variety of red peppers. For our take on this diash, we like to add both dried chilli and roasted red peppers to make a marinade. The peppers lend a sweet flavour, whislt the chilli paste adds heat and depth.
Another bestseller at the Hummingbird, this carrot cake is moist and full of flavour. You can vary how finely you chop the nuts for the sponge, and pecan nuts or walnuts can be substituted freely. For an extra-special touch, decorate the top with mini carrots – these can either be formed by hand using sugar paste or piped on using orange buttercream frosting.
