- 2 tbsp ground flaxseed
- 1/4 cup of your choice of milk
- 1/4 cup nut butter of your choice
- 1/3 cup Biona Organic Coconut Flour
- 2 tbsp ground almonds
- 1 tsp baking powder
- 2 tbsp coconut sugar
- 1 tbsp oil for frying
Method:
1. In a mixing bowl, prepare the flax eggs by mixing the ground flaxseed with 5 tbsp water and leave to thicken.
2. Whisk together the flax eggs with the nut butter and your choice of milk to loosen, followed by the dry ingredients, until well combined.
3. Heat a frying pan with oil and add a couple of tablespoons of batter. Cook for a few minutes on one side until bubbles appear, then flip and cook until golden.
4. Serve with your favourite toppings. Enjoy!

Great flour
Have used this in various GF recipes with great results. You only need a little flour compared to conventional flour, so it lasts ages.
Better flavour than others
This has a nice toasted flavour which some of the other brands don't; the only negative thing is that it doesn't seem to be as good as a thickener as the others I've tried so I have to use more of it
Finely milled, has little coconut flavour
I have tried all coconut flours Ocado stocks and they are all different. Biona coconut flour is finely milled but a bit grainy, has very little coconut flavour and is good for general cooking. Tiana flour is even finer this but has a toasted coconut flavour. Sukrin is a bit less finely milled but has very pleasant raw coconut flavour and is the best for raw desserts.
You need to add other stuff to bake with this
I agree it has a texture like sand. It took me a while to get a recipe for fruit muffins with this. I mix apples and eggs, one grated apple per egg, add a bit of milk, vanilla essence, 1 heaped table spoon on ground almonds, some milled flaxseeds and about two table spoons of coconut flour. A bit of baking powder and you have decent gluten free muffins. It takes playing with it to work out the dosage.

If you are new to baking with coconut flour you may not realise that it soaks up moisture like nobody's business!!! It's quite important to follow a good recepie - especially paleo if possible - then you will get a feel for how much extra fluid you have to add to a recepie with coconut flour (I learnt the hard way!). It makes a delicious paleo pizza base and I made the most epic coconut cupcakes with this last week. Would highly recommend.
