The Banneton baskets retain and absorb warmth, provide a consistent shape and texture and ensure the formation of a healthy crust by controlling moisture conditions on the surface of the dough.
Also great for use as bread baskets for serving bread and dinner rolls, these Bannetons are made from 100% natural cane and are secured with stainless rust-free pins.
Complement these baskets with our traditional bread stencils to add a professional finish.
Preparation and Usage
To clean the baskets, scrub them out with a brush and hot soapy water. Once scrubbed, rinsed and thoroughly dry
Cane bannetons need to be conditioned prior to their first use to avoid dough getting stuck to its sides.
Before its first use, lightly mist your cane banneton with water and dust it with a layer of flour. For any future uses, lightly flour your basket before you put in the dough and dip your dough in flour before you put it in the basket.
Be careful, as too much flour results in a thick, floury crust and will diminish the cane’s spiral pattern, so you may have to experiment before you get it exactly right.

Works well
As with most bannetons, lightly spraying with water followed by a good amount of flour worked into the grooves before first use pays dividends. I didn't have rice flour but a mix of coarse semolina and rye worked a treat.
Lovely Sourdough Loaves
Very nice and easy to use. Good for about a 500g flour loaf, nice lines and very artisan looking. Coat well with flour before placing loaf in, upside down. I have also been adding sesame and poppy seeds for a tastier loaf.
Comme chez le boulanger!
To release without sticking I first coat the inside with a spray oil, then give it a sprinkle of brown rice flour which I shake about to coat, knocking out the excess. This works a treat and I get great looking loaves from a decent basket. the stated max quantity 1kg of dough is too much though.
dough sticks
The dough sticks inside the lines, even with a good quantity of flour and not easy to clean. Lovely idea to prove in a natural product and have lines in the loaf. I am no master baker so perhaps others will have better luck.
