The Brindisa Ibérico Bellota Hams are cured by artisan ham makers Castro y Gonzalez for 3-4 years prior to slicing. Castro y Gonzalez have been curing ibérico hams in Salamanca, western Spain since 1910.
The Ibérico pig - native to Spain and Portugal - is very a special breed and quite distinct from the standard European pigs.
The ibérico pigs reared for our hams are free to range amongst the oak groves of the Spanish, the ""dehesa"". Their diet of acorns - ""bellotas"" - is an essential part of the amazing flavour and texture of this ham.
Each pack of Brindisa Ibérico Bellota Ham has been hand-carved and packed in Spain where the hams are cured.

Instructions
Ready to serve. For the best flavour remove slices from packaging, cover and bring to room temperature, ideally an hour before serving.
You can enhance the aroma and flavour of ibérico ham by serving the slices on warm plates.
[Serving note: the shiny, melting fat of ibérico ham contains much of the rich, deep flavour.]

excellent quality
This ham is very tasty and is as good as a high quality one I recently bought out in Spain. Yes, pricey, but had it with some nice cheese for a special after dinner with friends.
Amazing ham, shocked by other reviews
I think you need to only sell this ham to people who are not going to throw out the fat. Utterly speechless to that review. The fat is the tastiest bit, but their loss. The Marks and Spencer one really does not match up and is a weak version. Good price for this ham too, usually its about £20+ for 70 grams. Ignore the 1 star reviews.
I dont understand the poor reviews
Iberico ham is one of my favourite things, so Ive tried a lot from different places, and this is the most reliably good one. The M&S ones dont seem matured enough. This one is like Ive had in Spain. I like that its tougher and stronger tasting. Let it come to room temperature before eating. Its so tasty. Im sad Ive run out now

Authentic Iberica Bellota But ……
Special treat as so expensive but now I will not buy anymore as the pack size now halved for same price , oh dear , cheaper to order from Spain now .

The cuts were like shards and just not what you'd expect from anything claiming to be good quality.
