Vinification Details
The grapes manually harvested in small boxes, pressed
and settled. The vinification follows the traditionnal
method : first the juice is fermented ar low temperatue to
preserve the freshness of the sparkling. Then when the
wine is bottle, the second fermentation begins and lasts
11 months. This step transforms wine in sparkling wine

Absolutely delicious!
I had a few gorgeous glasses of this dry fizz while on a catch-up Zoom with a friend and it was so delicious I bought another bottle for New Years Eve, perfect for a glass of sparkly at midnight.

exploding wine!
Be warned. I took the foil and wire off and was about to start to carefully open this and it just exploded open, drenching me, covering my kitchen, drowning anything that was nearby (including my iPad). I dont know if it was a one-off or a problem with corking on a whole batch, but it turned out to be an expensive bottle of fizz (or quarter bottle for thats all that was left to drink).
