Instructions
Makes about 5lb (2.25kg)
2 1/4lb (1kg) fruit, 3 tablespoons (3 x 15ml spoons) fresh lemon juice, 3lb (1.4kg) sugar, 1/2 bottle Certo (125ml).
1. Prepare the fruit, crush thoroughly and put in a large pan.
2. Add the lemon juice and sugar to the pan. 3. Heat slowly until dissolved, stirring occasionally. 4. Add a small knob of butter to reduce foaming. 5. Bring quickly to a full rolling boil and boil rapidly for 2 minutes, stirring occasionally. 6. Remove from the heat and stir in the Certo. Skim if necessary.
7. Allow to cool slightly to prevent the fruit floating.
8. Pot and cover in the usual way.
When making 10lb (4.5kg) of jam double the quantities and boil for 4 minutes.

6. Remove from the heat and stir in the Certo. Skim if necessary.
7. Put 1/2 teaspoon on a cold plate. If not settling, boil rapidly for a further 1-2 minutes and check again.
8. Pot and cover.
When making 10lb (4.5kg) of jam double the quantities and boil for 7 minutes.

Fantastic
I've used this to make jams, compote, cheesecakes etc & it's worked perfectly every time. Always have a bottle in the cupboard.
Excellent product
Certo always works very well at getting fruit which are low in pectin to set (particularly strawberries!). The trick is not to add too much, which has a counter effect. Reduced boiling time equates to better colour and flavour. Have used Certo for over 20 years and never let me down.

Since I started using this pectin in my jam making, my jam has always been consistently good. I can not fault this, always works for me.
Disappointing
First time to use this pectin. Followed recipe on bottle. Now have 12 jars of strawberry flavoured liquid. Whilst strawberry jam can be difficult to set without over-boiling, this has been the biggest ever jam making disaster. I will never buy this again.
It didn't work
Making hedgerow jam using anything I can pick from a hedgerow it wouldn't set after a period of boiling so I added two bottles of Certo following instructions on the bottle. INext morning, 9 jars of syrup! I will contact Certo and see what went wrong. Next batch of hedgerow jelly I will use some redcurrants or apples for natural pectin.

I've used this to make raspberry, strawberry and blackcurrant jams - it removes all the uncertainty about the setting point and has always been brilliant. I wouldn't make jam without it now!
