Ingredients
6 eggs
6 tablespoons melted coconut oil
6 tablespoon coconut syrup (or honey)
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1/2 teaspoon baking soda
75g coconut flour
Chocolate chips to taste
Directions
1. Mix all dry ingredients in a bowl and set aside.
2. In another bowl, beat the eggs and mix in the coconut oil, vanilla, and honey. Add dry ingredients and chocolate chips and mix well!
3. Set aside for a few minutes to allow the coconut flour to absorb the liquid.
4. Scoop batter into a muffin pan and bake for 25-30 minutes at 175 Celsius / 350 Fahrenheit.
5. Enjoy!

An alternative
Wanted almond flour to try a recipe I found but nothing came up. After reading reviews, I’m going to try this.

Made inedible pancakes
I’m not sure how you are supposed to use this but it is not an easy substitute for wheat flour. I tried to use it to make pancakes but the mixture was like a brick, I guess coconut absorbs more liquid than wheat. Eventually I got the mixture looking ok but the pancakes fell apart and tasted disgusting. Probably there is a better way to use his but I was looking for a normal flour substitute, not a chemistry project. Won’t use again.
