Duck tagine with pears
In a flameproof casserole dish, brown 3 duck breasts in 2 tbsp oil. Drain on kitchen paper and pour off most of the fat. Add 4 sliced onions and cook for 15 minutes. Slice the duck breasts thickly and return to the pan. Stir in 3 crushed garlic cloves, 1 tsp sugar, 2 tsp Organic Ground Cinnamon, pinch of saffron threads, 400ml chicken stock, salt and pepper. Cover and simmer gently for 30 minutes. Cut 115g ready-to-eat dried pears into pieces and add to the casserole dish. Cook for a further 20 minutes. Stir in 3 tbsp chopped fresh coriander and serve with couscous
