Storage
Keep refrigerated 0-5°C. Consume within the use by date. Once pack is opened use on the same day. Suitable for freezing on day of purchase. Use within one month. Defrost fully before use. Do not re-freeze once defrosted.
Preparation and Usage
For perfectly cooked beef, our head chef recommends:
Topside: Heat oven to 200°C (fan 180°C)/Gas mk 6. Season, rubbing the fat with flour and dry mustard. Seal for 3-4 minutes in a hot pan. Roast for 20 minutes per 500g, plus a further 20 minutes. Baste well to keep it succulent and ensure the surface is thoroughly cooked. Cover and rest for 10-15 minutes before carving.
Brisket & Silverside: Heat oil in a pan, season and seal joint for 3-4 minutes. Add beef stock to cover, plus seasonal vegetables, herbs or spices, Worcestershire sauce or red wine if you like. Bring to boil, skim off fat, cover with foil and place in the oven at 170°C (fan 150°C)/Gas mk 3, for 3 hours. Remove from liquid and rest for 10-15 minutes before serving.
Wash hands, knives and surfaces thoroughly before and after preparing raw meat.

Delicious in our Slow Cooker
We were very happy with it as a pot roast 6hrs on low in our slow cooker. That being said, Ill likely only purchase it when its on sale.
Mostly Fat
A rolled piece of brisket with barely any meat but lots of thick fat. Wont buy again. Expensive mistake.
nice but expensive
I bought this on a flash sale. A good size piece of meat and as expected with brisket, a bit of fat. I slow cooked it in the oven in Guinness and then shredded - very tasty. But its a lot of money full price.
lots of fat and gristle
We often buy brisket and slow cook it for around 5 hours and the meat falls apart We cooked this for 6 hours in a slow cooker but it was still filial of fat and gristle
Great cut of meat
Bought in the flash sale. Cooked low and slow for 5 hours. Beautiful
Terrible
Avoid, even if flash sale. I got two before Christmas and popped them in the freezer. I cooked one today in the slow cooker but, the beef was fatty, gristly, tough and tasteless. Ruined the meal and by the time I had removed all the fat, gristle and sinew I was left with half the meat I expected and it was really greasy. Never again, Daylesford has really gone down hill.
