Thai Style Pumpkin Soup
A lightly spiced and sweet soup, great for the Autumn when Pumpkins are in season or can be substituted with Squash at other times of the year.

What you'll need...
Sesame oil, (or other cooking oil)
1 onion chopped
1 tablespoon of Thai red curry paste
2cm piece of fresh ginger, grated
1kg of pumpkin, peeled and cubed (removing the seeds) or equivalent of squash
600ml hot vegetable stock
200ml single cream
200ml coconut milk
6 dessertspoons of Delamere Dairy Plain Goats' Yogurt
Freshly chopped coriander
Thinly sliced spring onion and radish for garnishing
How to make...
In a large pan add a dash of sesame oil (or other cooking oil) and gently fry the onion, curry paste and ginger for a couple of minutes or so, until the onion has softened.
Add the pumpkin (or squash) and stir, then add the vegetable stock and bring to the boil.
Simmer for approx 15 to 20 minutes, until the pumpkin is soft and cooked through.
Remove from the heat.
Allow to cool a little before adding the cream and coconut milk, place into a blender and liquidise well. Season to taste.
In a separate bowl mix 6 spoonfuls of goats' yogurt with the chopped coriander.
Divide the soup into bowls and spoon over the yogurt.
Sprinkle the thinly sliced spring onion and radish to garnish.

wow!
Thick rich creamy delicious. No odd ''goaty'' flavours, only a delicious deep tang. I eat it with a little honey or maple syrup and am addicted as of past few months when I cannot stop buying it. Was nervous at first that it would taste ''off'' compared to cow milk yoghurt. But the opposite. It is a surprising combination of mild (no sourness or funky background) but intense (more delicious for sure than cow yoghurt. J'adore and recommend especially for anyone wanting to avoid the type of protein present in cow milk which many are allergic to, and which is not present in goat milk.

Added Maize starch gave allergic reaction
Tastes very creamy and lovely. Stupidly I checked the ingredients after I had eaten this as ASSUMED that this would of course just be good quality yoghurt. Nope. Added Maize starch to give it that viscosity. As someone with an autoimmune disease Im super careful about checking stuff so I dont get corn in my system. Stupid me for not checking. Shame on the producers for adding this. Not necessary.
My favourite goats yogurt
Absolutely delicious, I love this mild goats yogurt and always look out for it in preference to other brands. No idea what the negative reviews are on about.

Don\x27t add Starch to yoghurt!!!!
As a biologist specialised in the food industry, I am increasingly sick with the modifications the agri-business is introducing and imposing on the consumer. A BIG NOOOOO to starch in yoghurt! It's not hard to make plain yoghurt with just milk & cultures! The only thing I could taste here from first spoon is the starch. (before reading the ingredients!).
