Malthouse Bread
220°C, Fan 200°C, 425°F, Gas 7
500g Doves Farm Organic Malthouse Bread Flour
1 tsp Doves Farm Quick Yeast
1 tsp Sugar
1 tsp Salt
325ml Tepid water
1 tbsp Oil
Oil, for tin
1. Rub some oil around the inside of a 1kg/2lb bread tin.
2. Put the flour, yeast, sugar, and salt into a large bowl and blend them together.
3. Stir in the water, and when everything looks craggy and lumpy, stir in the oil
4. Using your hands, gather everything together into a doughy mass.
5. Knead the dough in the bowl, or on a work surface, for 100 presses. Avoid adding flour if possible.
6. Cover the dough bowl with a large upturned mixing bowl and leave it in a warm place for the dough to double in size, which will take about an hour.
7. Knead the dough for another 100 presses.
8. Shape the dough and put it into your prepared tin.
9. Cover the tin with a large upturned mixing bowl and leave it to rise in a warm place for 40 minutes.
10. Pre-heat the oven.
11. Remove the mixing bowl and bake the loaf for 40-45 minutes.
12. Turn the bread out of the tin, tap the base and if it sounds hollow, the bread is cooked.
13. Leave to cool on a wire rack.

Makes a great sourdough
My fave flour to use for sourdough. Brill texture and flavour
Best flour
Love this flour. Makes perfect bread and also flatbreads (1/2 this, half strong bread flour), as adds texture. Recommended.
hardly any malted grains
I love the flavour and texture of malted flour. We found the bread we baked with this rather disappointing as it lacked flavour and contained scarcely any malted grains.
Makes georgeous bread
If you like a nice malty loaf, this is the flour for you. At 7.4g fibre per 100g, it is sufficiently high in fibre. And it's so easy to make a loaf in the Panasonic bread machine. Can't praise it enough.
Granary Goodness
You get a lovely aroma of barley and malt when you bake this bread. Nutty grains and a fine texture make it a pleasure to work into good dough. I like to use it in a strong white loaf, 50-50 and it makes a nice compliment with wholegrain flour, too.
