ORGANIC Home made pasta is traditionally made with fine Type 'O' pasta flour in Italy. This light white flour is high in protein and can also be used for pizza and bread making.
'We are passionate about home baking and also believe that what we eat today will effect our health tomorrow. As well as being a satisfying and rewarding activity, when you bake at home you can select the best quality, local and seasonal ingredients, and be certain of what has gone into your food. You and your family will enjoy great tasting home made food. We often double the recipe and when baked, freeze half to eat at a later date.
'In our mill we make a large range of flours from many different natural grains, beans & seeds without adding refined gluten or enzymes. We blend specific grain varieties to ensure that the resulting flour has the optimum characteristic for the type of baking it will be used for. This means soft wheat varieties for cakes, pastry and sauces or stronger hard wheat for bread making flours. The more unusual flours have distinctive characters and applications of their own. If you are on a special diet look out for those flours that suit your situation.

Try this Organic Pasta Flour in our recipe for fresh tagliatelle. Making homemade pasta couldn't be simpler.
Fresh Tagliatelle - Serves 2-3
160g Doves Farm Organic Pasta Flour
2 Eggs
Flour, for dusting
2l Water
1 tsp Salt
1 tbsp Olive oil
1. Put the flour into a mixing bowl and make a depression in the middle.
2. Break the eggs into the middle of the flour to be incorporated.
3. Continue stirring the eggs as the flour mixes in, eventually forming a dough.
4. Gather the dough together and knead it for 100 presses to make a smooth ball of dough, adding a little flour only if needed.
5. Cover and leave the dough to rest for 15 minutes.
6. To roll out the dough, sprinkle flour over the table and a rolling pin.
7. Cut the pasta dough into four pieces and roll each piece into a rectangle, turning it over regularly and dusting lightly with flour.
8. Continue rolling the dough until it is the thickness of paper clip.
9. To make the tagliatelle, cut the dough into 7mm / 1/4" wide strips.
10. Dust the uncooked pasta with flour to stop it sticking and lay it out, or hang it over the edge of a tall saucepan, for an hour to dry.
11. Repeat with all the pieces of dough.
12. Cook the pasta in salted boiling water until al dente, drain and stir through the olive oil.

Pasta!!!
We recently have changed up our eating habits and become more conscious in food we eat this organic pasta flour with the Ocado organic free range eggs is perfect made our first pasta last week. So easy 300g plus 3 eggs
