Preparation and Usage
Recipes
220°C, Fan 200°C, 425°F, Gas 7
200g Doves Farm Organic White Rye Flour
4 tsp Baking Powder
1 tsp Sage
1 tsp Rosemary
1 tsp Thyme
1 tsp Sugar
1/2 tsp Black pepper
4 tbsp Olive oil
125ml Water
Flour, for dusting
1. Dust a large baking tray liberally with flour and pre-heat the oven.
2. Sieve the flour and baking powder into a mixing bowl, add the sage, rosemary, thyme, sugar, salt and pepper and blend together well.
3. Add the oil to the bowl and using a fork, blend everything together until the mixture resembles breadcrumbs.
4. Gently add the water, stirring to form a soft sticky dough. Do not over-mix.
5. Gather together the dough into a rough ball and transfer it to the prepared baking tray.
6. Dust the top with flour and gently flatten the dough with your hands, into a circle 2cm/ 3/4" thick.
7. Cut the dough into six wedges pushing them apart with the knife to make a 25mm/1" space between each.
8. Bake for 18-20 minutes.
9. Transfer the triangular scones to a wire rack to cool.

the best flour to feed your sourdough starter
I use this flour for my sourdough starter and levain and it produces brilliant results. My starter is always full of life and quick to peak giving me the most rise and the fluffiest loaves. I love this flour.
good, fine and light
Bought for emergency use instead of my usual brand, and is surprisingly light, fresh, and good. Will buy again.
Makes great waffles and scones
I used this to make waffles and a vegan Christmas cake and it worked a treat. Spotted the herb scone recipe on the back of the bag and tried that delicious! Trying bread next.
Tasty and delicious in bread
We use this in our homemade bread which we make about 2 to 3 loaves a week. We mix this with white bread flour and wholemeal flour in different ratios. Always comes out tasty and love that it is organic.
Tastes good but keep in air\-tight container
Tasty flour that is the cornerstone of my sourdough starter but my last pack was contaminated with flour weevil eggs. This is inevitable with wholegrain unbleached flour and without the wild yeasts and microbes it would not be such a good starter. In general it is good practice to keep whole flours separated from bulk hulled flours in air-tight containers. I'm still going to keep buying the product but I would not have been happy if it had cost me my flour collection.
