Almond Rye Shortbread - Makes 18
170°C, Fan 150°C, 325°F, Gas 3
125g Butter
75g Caster sugar
125g Doves Farm Organic Wholemeal Rye Flour
125g Ground almonds
1. Rub a little of the butter around the inside of an 18cm/7" square cake tin and pre-heat the oven.
2. Put the butter and sugar into a bowl and beat together until light and fluffy.
3. Mix in the flour and ground almonds.
4. Using your hands gather everything together, pressing into a smooth ball of dough.
5. Press the dough into the prepared tin and smooth the top.
6. Using a fork, prick holes all over the surface, pressing right through the dough.
7. Cut across the tin several times, through the dough, to form 18 rectangular finger (across in 3, down in 6).
8. Bake for 40-45 minutes.
9. Remove from the oven and carefully cut through the rectangles again. Leave in the tin until cold.

Fabulous.
This is my favourite Rye flour, and it makes a great starter for my sourdough bread. Plus, the recipe on the pack for the shortbread is really lovely. I make it by simply rubbing in the ingredients, then pressing into pan & baking.... no need to use the creaming method etc.
lovely mixed with w/m flour
I use this in my Panasonic breadmaker for their half & half wholemeal & rye loaf. It always looks odd when its cooked as it doesnt rise like other bread but it tastes lovely, after a couple of days I put it in a bag in the fridge & use it for amazing toast!
great taste
we use this to feed our starter and add to our weekly sourdough loaves, and occasionally to make rye bread. it taste delicious and is very reliable.
Beautiful home made toast
I'm so glad I gave this a try. Use one third to doves farm white bread flour and it makes exceedingly good home made bread for toasting. I have also used with home made pittas and pizzas and cobs. The best flavour of all this week was a homemade vegetarian curry stuffed inside a bread made with one part rye flour and two parts white bread flour, it gave a delicious crust esp when sprinkled with salt.
Makes delicious sourdough
I've been using 1/3 rye in my sourdough & it's absolutely delicious. Much prefer organic foods & being wholemeal it is healthier. Very happy.
Great flavour
Love this flour, great in sourdough, but also in rye bread. Pleased I can get it easily from Ocado.
