Japanese tofu making demands fastidious attention to detail. For the best results you need time and a delicate touch. No shortcuts or scrimping on ingredients!
We soak our organic, sustainable soya beans overnight to deliver a luxuriously creamy soya milk that is perfect for making our tofu.
The milk is mixed with a special, authentic ingredient called Nigari, which comes from natural salts derived from Japanese seawater. It helps to separate the curds (the solids that we turn into tofu). Our soya bean curds are then gently pasteurised to keep in all the goodness (we don't allow any harsh boiling here!)
As the curds settle, they form a dense blanket of loveliness that is then carefully pressed to deliver the perfect texture.

Cook: Tofu can be fried, grilled, baked, BBQ roasted or braised with any marinade, glaze or sauce of your choice.

We have used a mix of Mediterranean veggies here. Depending on the season, you could also use winter roots such as carrots, parsnips, beets and sweet potatoes.
Serves 2
Ingredients
300g Dragonfly Super Firm Tofu
1 garlic clove, crushed
Zest and juice of 1 lemon
1 tbsp dried mixed herbs
1 tbsp extra virgin olive oil
Salt and black pepper
For the roasted vegetables
1 red onion, cut into chunks
1 large courgette, sliced
1 red pepper, cut into chunks
1 yellow pepper, cut into chunks
Sprigs of fresh rosemary (or other herbs - optional)
Extra virgin olive oil
Method
1. Preheat the oven to 200C, Gas mark 6.
2. Cut the tofu into 6 slices.
3. Mix the garlic, lemon zest and juice together with the mixed herbs and oil and a little seasoning in a bowl.
4. Add the tofu and leave to allow the flavours to absorb for 10-15 minutes.
5. Scatter the prepared veggies in a roasting tin with the rosemary (if using) and drizzle over some extra virgin oil. Bake for about 20 minutes, then add the tofu and marinated on top of the vegetables and continue to cook for a further 15-20 minutes.
6. Serve on warmed minutes.

Our preferred brand.
Our favourite tofu. Love that it's organic. We used to buy Cauldron by default, but then discovered this on special and won't go back. We find it's firm, but not as firm as Cauldron which we always found a little on the rubbery side (which is fine, but once we had this we didn't want to go back).
Firm but not super firm
We have no trouble using this in stir fries or making tofu bites. I wouldn't call it super -firm - as a previous reviewer has mentioned, putting it in a tofu press leads to ragged edges. However, wrapping in a piece of kitchen towel & pressing gently is perfectly fine.

Best tofu by far
This is definitely the best tofu option - as lots of people have said, it’s not super firm, but the texture is so much nicer than big brands like Tofoo etc (which I honestly find vile). It’s a shame it’s not stocked very widely in supermarkets because it means non-vegans’ first taste of tofu is Toffoo, which puts them off for life. Anyway, main staple for me and one of the main reasons I still use ocado
Not firm!
Bought this instead of my usual as it was on offer. It definitely is not firm! I used my tofu press to get rid of excess water and the edges of the block were mushy and crumbled.
