Preparation and Usage

What You'll Need:
140ml Vegetable Oil (we would recommend sunflower or rapeseed oil)
115ml Water
105ml Milk (Use a dairy free alternative if preferred)
1 Large Egg
Cooking Instructions:
1. Preheat your oven to 160°c / 150°c (fan)/ gas mark 4
2. Empty the contents of your Free and Easy Carrot Cake mix into a bowl
3. Add the oil, milk and egg (or if you're making a vegan cake, the oil and water) and whisk until combined. We'd recommend using an electric mixer on low speed for 1 minute, scraping down the bowl then mixing on high for a further 4 minutes to ensure your cake rises
4. Spoon or pour the mixture into your prepared cases or tins and bake (for cook times see side of pack, cooking times may vary a little depending on your oven)
5. Cool on a wire rack, decorate to your heart's content and dive in!
To make the Perfect Vegan Cake:
140ml Vegetable Oil
230ml Water
Add the oil and water. Prepare as per the other instructions. The mix already contains a vegan egg replacer to help it rise, and will work well to make it a 100% vegan cake, although it will be slightly less fluffy.

Such a disappointment
I have bought gluten free cake mixes previously so had good expectations. Unfortunately it tasted so bad that it went in the bin after one slice and no amount of icing could disguise it. The only redeeming feature was that it did actually rise.

Lovely cake g’s everyone complaining yous look dumb af you’ve just told 100s of people you can’t follow a simple recipe took me 20m and turned out great 👍🏽 would recommend js rlly high in calories
Moist delicious cake
It has a really lovely flavour. We made the vegan recipe with oat milk, extra baking powder, plus rapeseed oil.
This recipe does not work
There were some good reviews for this cake mix and as a coeliac I thought it would make a lovely carrot cake. Wrong. I followed the instructions to the letter, but the cake did not rise. It was not cooked in the time stated and although I left it a little longer that did not make any difference. The resulting cake was just an oily, watery mess. My oven is new so it was not the fault of the oven. I tried one mouthful, it tasted oily and of coconut; I gave it to the birds. On account of the previous good reviews I purchased two boxes, the other one has gone in the bin; it is not worth using good ingredients to attempt to make the second one.
Complete let down!
Followed the recipe to a tee, did not work out for us...... the mix was too watery and did not rise properly in the specified cooking time, left in the oven for longer and they began to rise but soon deflated again and the inside was a strange chewy texture. I should have known to make our own carrot cake from scratch, but I read the reviews and thought I would save myself some time and effort by using a ready mix, what a shame it was a complete letdown. Save your money honestly and don’t bother!
This sugar free cake is excellent
Contrary to the other reviews I'm impressed. I am a sugar-junky that wanted to give up sugar. I bought some of these sugar free cakes as a means of being able to have something nice now and then without the sugar. Now, bear in mind I did say I was a sugar junky, which basically means I'm not going to be easily impressed. This is sweet and tasty. I used a blender and that might be good. I made 2 x 8" sponges and then layered with a filling I made myself of sugar free buttercream and it is delicious. I will try this again maybe adding a few walnuts as this lends itself perfectly to making a walnut cake. It doesn't overly rise, so whisking is key I think. If that matters I'm wondering if adding a pinch of baking soda might help.. not sure. It definitely was fine for me and did rise enough that one on top of the other with a minimal filling made a cake about 1.5-2" or so high and that was okay. Covered it using a foil dish that I cooked it in with a handy perspex lid and 2 days later it's still fine. If I was going to be at all negative I would say that there is no filling and so the image they use is slightly mis-leading as other cake mixes usually include whatever is shown on the picture and free and easy don't seem to - which I think is a big mistake on their part and will not help them gain fair reviews. I'm not going to remove a star though as I think some of the reviews have been a little harsher than this item deserves. If you want to reduce sugar but having a piece of sugar free cake will make you feel better... this product will do that. If you want a cake mix that is going to rise like crazy and comes with a filling you need a sugar based one. The difference is the blend and lack of bad ingredients and if you don't allow for that you might be disappointed. For me, this is superb and I will definitely be buying this again and again.
