One of these methods is to slowly extrude the pasta through a bronze die, creating a textured product with a rough surface, allowing the sauces to hold well.

Excellent tagliatelle
This pasta is rather expensive, considering you only get 250g. But it really is very good tagliatelle. The thinness is spot on, the chewy texture is delicious and satisfying. It reminds me of the tagliatelle you can buy in fresh-pasta shops in Italy.
mouldy
Ordered 2 packs of this and both were mouldy before I opened them.
Disappointed....
I was sent this as a substitution and would not re buy. I found the pasta too thick in both width and actual thickness. I found it quite claggy and dense. It contains a lot of egg (eggs are free range) The saturated fat content per 100g is higher than I would expect for fresh pasta. Therefore, if you are serving It with a rich sauce the saturated fat all adds up.... It resembled and reminded me of lasagna sheets Just cut into thick short strips. It sadly spoilt the slow cooked ragu sauce I made..... I am back to Giuseppe Cocco Dried Tagliatelle which I think is far superior and cooks in 4 minutes despite being dried pasta.
Good pasta
First thing to say is that on the pack it says that it serves two, advising five nests each. However, this seemed huge and so I did four each, which was more than adequate, and my husband and I have hearty appetites! It tasted fine and cooked well. I wouldn’t necessarily chose it over the good quality Italian brand of of dry tagliatelle I normally buy, but it was pleasant enough.
Plastic not recyclabe
Plastic not recyclable. How can they justify this nowadays?
Disappointing
Very low on flavour - tastes watery. Wasnt the quality we expected for the price. Wouldnt buy again.
