The Gressingham Duck® is a unique breed that first came about when the flavourful Mallard was crossed with the larger Pekin duck, now renowned for its superior taste and succulence making it a favourite amongst restaurant chefs.
Gressingham Duck@ is grown and packed on Red Tractor assured farms and factories in East Anglia.

Storage
Preparation and Usage
1. Remove giblets, prick skin and season.
2. Oven roast at 220°c / Fan 200°c / Gas Mark 7, 40 minutes per kg plus 20 minutes.
3. Let the duck rest for 15 minutes, then carve.
Instructions
1 Remove All Packaging...
...and giblets. Place bird on a rack in a deep roasting tin, prick the skin all over and season, if desired.
2 roast in the oven for 40 minutes per kg plus an extra 10 minutes
3 rest the duck for 10-20 minutes, carve and enjoy

Recipes
Homely and satisfying, this roast works really well with carrots and broccoli on the side.
Along with the duck, you'll need:
4tbsp Gressingham Duck® fat
1kg roasting potatoes, peeled and chopped
2 garlic bulbs, halved
4 sprigs rosemary
1 onion, chopped
400ml chicken stock or water
250ml white wine
3tbsp honey
50g butter
1. Start cooking the duck as detailed on the front of this label, with the addition of the duck fat in the roasting tray.
2. After 45 minutes, add the potatoes, rosemary, onion and garlic, baste and season. Continue to baste every half an hour.
3. When the duck is done according to the pack instructions, take it out of the oven and keep warm.
4. Move the potatoes to a baking tray, baste and continue to cook until done.
5. Pour off the fate from the first roasting tray and keep in a heatproof container for next time.
6. This will leave the juices, garlic and rosemary behind. Add the wine, bring to the boil and scrape the bits of the bottom. Strain into another pan, add the chicken stock, and reduce by half or until it starts to thicken. Stir in the butter and honey. Taste for seasoning and sweetness and adjust accordingly

Storage:
Keep refrigerated 0ºC to +4ºC. If freezing, freeze as soon after purchase as possible and within the use by date. Use within three months. Defrost thoroughly in the bottom of a refrigerator and cook within 24 hours. Do not refreeze once defrosted.

buy this one instead of the one with pancakes.
This duck is almost 1kg bigger than the one with sauce and pancakes. A large bottle Of plum sauce is only a couple of pound on Ocado. So much better value.
fresh crispy duck.
Bought in flash sale and cooked very slowly in oven for 4 1/2 hours just adding a little five spice. Was delicious with M&S pancakes hoi sin sauce cucumber and spring onions. Really delicious and fresh tasting.
Lovely
I picked up the duck in a flash sale. Marinated for 24 hours, steamed and then air fried until deep mahogany brown and crispy. served with M & S chinese pancakes, etc. Delicious and served three of us with a little leftover. Will be buying again.
Smelly and mostly inedible day before use by date.
I cooked this two days after delivery, a day before its use by date. It was very smelly when I opened the bag. The giblet bag stank, and once opened had to be double bagged for the bin. I washed the duck before roasting to remove the fishy smell but even so, the legs and underparts had an unpleasant taste so we didn't eat them, and the juices too were not pleasant so had to be discarded. All in all very disappointing. The bird was a good size, 2kg, though bear in mind a duck has a lot of breastbone in it, but the date quality control needs to be better.
delicious duck!
Bought during a flash sale and followed their recipe for peking duck on gressinghams website. Wow! I cannot understand the bad reviews because it was so tasty, moist and flavourful. Would buy full price more regularly!
very large tasty duck
This was much bigger than the gressinghsm ducks I have had elsewhere, nominally 2kg but was way over. It was very meaty for a duck and tasty. I cut off the two large breasts and fried them rare and roasted the rest. It was all good, no problems.
