Halen Mon Pure Sea Salt PDO 100g

Halen Môn can be used wherever salt is called for, at the table or in your cooking. You will need less than half of the amount of table salt you wold normally use, so add very little at first until you get used to it.

Canadian Butter Tarts

Shortcrust pastry
75g raisins
Cointreau or boiling water
1 tbsp candied orange peel (optional)
60 g good quality butter
110 g light brown sugar
340 g golden syrup
2 free range eggs slightly beaten
1 tsp vanilla essence

Line muffin tins with shortcrust pastry, but do not prick it. (This mixture will make 12 to 18 shells, depending on the tin depth.)
Soak raisins in boiling water or Cointreau until softened. Add candied orange peel cut into small pieces if used. Drain raisins and arrange in the tart shells.
Mix together the butter, light brown sugar and golden syrup. Add the eggs and vanilla essence. Mix until just blended. Spoon into the unbaked shells to two-thirds full (any fuller and they will overflow).
Bake for 15 to 18 minutes at 190°C/375°F/gas mark 5.
Sprinkle the tops with Pure Hale Môn or Halen Môn with Vanilla to taste, and serve slightly warm with a good quality vanilla ice cream.

Other ideas: Sprinkle on your breakfast boiled egg. Slip a few flakes onto a sliced homegrown tomato. Dip a chip into a crunchy pile of Pure Halen Môn for absolute indulgence.

Halen Môn

The Halen Môn story began with a bubbling saucepan of seawater on the Aga in our kitchen in North Wales. We've long since moved production out of our kitchen, but we still harvest by hand from the sparkling seas around the Isle of Anglesey. The resulting salt is like nothing else on earth: crunchy and crisp, strong yet delicate and subtly sweet. It's ideal as a cooking ingredient and as the perfect finishing touch at the table. Where did our tubes go?
We used to package our salt in foil-lined cardboard tubes with metal or plastic ends. They were sturdy and looked really nice. They were also very hard to recycle and so mostly ended up as landfill. We weren't happy about that. Our new pouches uses 50% less material. This card is easily recyclable, and an increasing number of recycling facilities have the capacity to recycle plastic bags, films and pouches. The pouch is resealable, so it will work just as well as a tube for storing your salt.
