"I’ve only just come across these, but having bought the box of Thai Red Curry Paste a couple of weeks ago, I look forward to trying all the rest. They’re a brilliant innovation: the pastes are made fresh, and then froI zen in ice-lolly moulds; all you need to do when you want to make a curry, is fry the lolly of curry paste (straight from frozen) in a pan, add coconut milk, let it all bubble for a few minutes, then add what you want. The flavours are so true, and there is nothing artificial-tasting: if you’re not pounding a paste together yourself, this is the very next best thing. Maybe even better!

The pastes are vegan, though I did add some drops of fish sauce to my curries (along with salt and lime juice). But I love to fiddle about – and we all have our own personal tastes. The Red Thai Curry paste is my stand-out favourite, but from now on I am keeping a stash of all of them in my freezer. Each lolly’s worth is enough for a curry for two (using one can of coconut milk) so these are especially useful for small households. And while we’re instructed to remove the lolly stick first, I find it easier to remove it once the paste has begun melting in the pan." Nigella Lawson
