Place in a heatproof bowl over a shallow saucepan of water. Stir until melted.

Ingredients:
180g Lindt 51% Dark Cooking Chocolate, 100g butter, 100g sugar, 3 eggs, (separated), 100g ground almonds, 25g plain flour, pinch of salt.
1. Preheat oven to 175°C (160°C Fan).
2. Grease cake tin.
3. In an electric mixer, cream butter and sugar until light and fluffy, add one egg yolk at a time, beating well after each addition.
4. Melt the chocolate and mix into the butter mixture.
5. Sift the ground almonds and flour, fold into the chocolate mixture.
6. Whisk egg whites and salt to soft peaks and fold into cake mixture.
7. Pour batter into cake tin and bake for 25 minutes or until a skewer come out clean.
8. Once cooled, slice and serve with cream or ice cream.

Delicious chocolate - fruity and melts so well. Very good to eat on its own too, like everything Lindt!
Great for eating and cooking
Given its is only 51%, we expected it not to have a full flavour. How wrong we were, it is really smooth and has a deep flavour. Bought it for making chocolate pots but the teens ended up eating it all !
As cooking chocolate goes ......
I bought this by mistake, the price made me think I was buying dark chocolate, which I needed for a sacher torte. Oh well, I used it in the mixture and it is too sweet. Will have to buy some proper chocolate for the frosting. Not sure what to do with the rest of the Lindt. However, it did melt well so a slight plus.
