Ingredients
Cake
225g Organic Self Raising flour
1 teaspoon baking powder
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground mixed spice
1/2 teaspoon ground ginger
225g light brown muscovado sugar
Grated zest of 1/2 unwaxed orange
100g walnut pieces
3 large eggs, beaten to mix
150ml sunflower oil
250g (3 medium) grated carrots
Filling & Topping
200g full fat cream cheese
50g unsalted butter, softened
150g icing sugar, sifted
Grated zest of 1/2 unwaxed orange (plus extra to decorate - optional)
2 teaspoon orange juice
2 x 20.5cm/8inch sandwich tins, greased and base-lined
Method
1. Heat the oven to 160°C fan/ 180°C/350°F/Gas 4.
2. Sift the flour, baking powder and spices into a large bowl.
3. Stir in the orange zest, sugar and nuts, then add the beaten eggs, sunflower oil and carrots. Mix until thoroughly combined.
4. Divide the mixture between the two prepared tins and spread evenly. Bake for about 25 minutes or until a cocktail stick inserted into the centre of each cake comes out clean.
5. Turn out the cake onto a wire rack and leave to cool completely.
6. To make the filling and topping, beat together all the ingredients until very smooth and creamy.
7. Spread almost half of the mixture onto one of the cakes, Top with the second cake and spread the remaining mixture over the top. The cake can be decorated with extra orange zest or left plain.
8. Store in an airtight container in a cool place and eat within four days.
Recipe Tip
Use 100g raisins instead of the walnuts.

Disastrous
I simply do not understand the 5 star ratings for this flour. I have used it twice now and on both occasions the cake that I have been making has had zero rise. The first time I ended up having to bake a whole new birthday cake as it was so flat it was like a glorified biscuit. I gave the flour the benefit of the doubt and assumed Id done something wrong, however have just used again and exactly the same thing has happened. Its almost like its plain flour and not intended to rise. Absolutely awful and will never ever use again.
Fine, fine flour
Lovely to use. It is light and airy and has added a ‘lift’ to anything I’ve baked so far.
Been using for years and no funny aftertaste!
Not sure what people are saying about an aftertaste. This is high quality flour! My husband struggles with white bread products in particular and gets acid reflux. This is the only flour which does not cause him discomfort. It produces the lightest and best produce.
Awful chemical after taste - avoid
Just baked cup cakes with my children which looked delicious but when we tasted them there was a chemical after taste which really concerned me - this was the only new ingredient we used and now after reading the reviews I know why - I have thrown it out along with our lovely cupcakes. Awful that Ocado still sell this despite clearly something is not right worth this product.
Wow!
Now I'm not one to usually rave about flour, I mean life's too short right but just buy this, it's fantastic. Used it to make pastry, thought I should really use plain but this was all I had and wow, it was totally amazing, even though I do say it myself! Love it and will stick with this from now on.
Flour Power
I'm not an expert in flour & not quite sure how to rate against other brands. It's reassuring that it's organic. Easy baking with this self raising option. A fair price at £1.49 for 1kg.
