Ingredients
200g Finest plain white flour
175g Unsalted butter, plus more for greasing
200g Soft light brown sugar
100g Caster sugar
200g White chocolate chunks
3 Medium eggs
2 tsp vanilla extract
Pinch of salt

25cm x 20cm baking tin
Method
1. Heat the oven to 180°C / fan 160°C / gas 4.
Line a baking tin with parchment paper.
2. Melt the butter, both sugars and half the chocolate with a pinch of salt in a pan over a low heat, until melted and smooth. Remove from the heat and leave to cool for about 5 mins.
3. Beat the eggs into the white chocolate mixture with a wooden spoon or spatula, then stir in the vanilla extract, followed by the flour. Fold in the remaining white chocolate chunks.
4. Scrape into the tin, and smooth out to the sides.
Bake for 40-45 mins until the top has a papery crust, the edges are golden and coming away from the tin, but there's still a slight wobble in the middle of the blondies. Leave to cool in the tin before cutting into squares.
Recipe Tip
Add 50g chopped nuts or dried fruit of your choice to the batter, or top with 50g crushed biscuits or pretzels before baking to flavour the blondies.

Great flour
It is great to be able to buy British flour, and this flour is good quality and perfect for baking. It is also well packed so it doesn't spill everywhere when you open the pack
great flour
I use this all the time for baking and its a great product
Perfect pancakes
I have never mastered the art of perfect crepe consistency pancakes until I used this flour. Game changer!
Lumpy
Don't know what the problem is but this plain flour comes out lumpy in pancake and Yorkshire pudding batter - even after being sieved - even after using a balloon whisk. I have used and liked their bread flour so I thought this would be a good alternative when own brand flour was out of stock. Do yourselves a favour - use cheaper - but better plain flour.
great flour, but paper bag now very thin
Always used to buy Marriages flour, which used to have good paper bags. The flour is still good, but the paper bags are now so thin that you easily put your finger through the bag, and its almost impossible to open satisfactorily, no matter how careful you are. Real shame.
Practically perfect
I have learned that it is important to pay a tiny bit more for flour as the results when baking are notably better. Highly recommended.
