Ingredients
500g Very Strong
Wholemeal 100%
Canadian flour
7g dried fast action yeast, (or 14g fresh yeast)
10g fat or olive oil
7g sea salt
330ml lukewarm water
Method
Baking by Hand
1. Grease the bread tin(s). Place the flour, salt, yeast and fat into a large mixing bowl. Mix the fat through the flour and make a well in the centre of the flour mixture.
2. Add most of the water to the well, keeping a little in reserve, and mix to a soft dough. Add the remaining water if necessary.
3. Tip the dough onto a table and knead for 8-10 minutes.
4. Place the dough back into the bowl and cover with oiled cling film or a damp tea towel. Rest in a warm place until the dough doubles in size. This will take approximately 45 minutes.
5. Split the dough into two pieces if desired. Mould the dough round and fold to the shape of the tin(s). Place the dough piece into the tin, seam down, cover with oiled cling film or a damp tea towel. Put in a warm place and allow to rise about 1cm above the tin. This will take 45-60 minutes.
6. Uncover and bake in a preheated oven, 220°C fan/240°C/430°F/Gas 8. Bake small loaves for 20-25 minutes or a large loaf for 30-35 minutes.
7. Remove the loaf from the tin. Check it is baked by tapping the bottom of the loaf - it should sound hollow. Place on a wire rack to cool.
Using a Bread Machine
We recommend following the manufacturer's instructions, particularly the order in which to add ingredients and the water quantity.
Recipe Tip
To make a wholemeal and oat loaf: after proving, roll the dough in a bowl containing a small handful of jumbo oats, then place into the bread tin for the second prove.

Sometimes paying a bit more really works. This is a very good flour and always rises well. Love the high protein.
Lovely light wholemeal
Makes the best wholemeal bread I've ever made, by quite a way
Makes Wholesome Bread!
I’d forgotten what real wholemeal bread tasted like until I made a loaf with this flour….courtesy of the bread maker of course. I did 50/50 with Marriages malted seeded flour and menu 5 on the Panasonic. To make a firmer loaf, I’ve found, purely by mistake due to me not hearing the end beeps, I now leave in the machine, not switching anything off, for 20/30 minutes after which I take out, leave on the side and slice the next day for freezing. Never a slice wasted then. The taste and texture is excellent and must be one of the best loaves I’ve tasted for a long long while. I highly recommend!
Simply the best
This is the best wholemeal bread flour sold at Ocado. it bakes perfect loaves in my Panasonic breadmaker, whereas other cheaper flours don't rise as well.
Nice flavour
I make my every day bread using this with a Panasonic Bread Maker. I use 400g of this with 100g of Emmer Flour (from Doves organic range) (along with two teaspoons of sugar, 1.5 teaspoons salt and 370g of water. I put it on program 5 (wholemeal slow bake which takes five hours) and I choose extra large as the size option (although the instructions say to just use the medium setting). I get a comfortably risen, delicious loaf. The emmer flour does curtail the rise a bit, but I am happy to accept that because of the depth of delicious, nutty flavour it lends and also because of the extra nutritional benefits.
