Our beef roasting joints are selected from knuckle cuts which are first trimmed, then matured for 21 days and finally, tied ready for roasting. Suitable for freezing. Freeze on or before Use By date. Use within 1 month. Defrost thoroughly before cooking and consume on day of defrosting. Do not refreeze.
Preparation and Usage
Oven:
Rare: 18 minutes per 500g
Medium: 22 minutes per 500g
Well done: 33 minutes per 500g
Allow the product to stand at room temperature for 30 mins before cooking. Preheat oven and baking tray. Oil and season surface of meat. Place in oven at 240ºC / Fan 220ºC / Gas 9 for 25 mins. Remove joint from oven, add 4 tbsp of water and cover joint loosely with foil. Reduce temperature to 180ºC / Fan 160ºC / Gas 5 and continue to cook for remaining time. For rare, cook for 18 mins per 500g. For medium, cook for 22 mins per 500g. For well done, cook for 33 mins per 500g.
Baste joint occasionally during cooking. Remove from oven, cover with foil and rest for 15 mins before carving. For best results, carve thinly and drizzle over juices in roasting tray, or use juices to make a gravy.

poorly trimmed
Our product was poorly trimmed and had a tough thick membrane running right through the middle. It was difficult and unpleasant to carve, most of it went to the cat. Extremely disappointing.
chewy
Very chewy and not much flavour .. expensive for what it is .. will not buy again
Good value
We cooked this using Nigella's recipe with a marinade and then cook for about 45 mins. It was good but would have benefited for a longer resting time than the 10 mins she suggests - I would think 30 mins.
Nice little roast
This joint was perfect for a family of four with some leftovers. I seasoned and seared the joint on all sides in a pan before roasting, basted with butter partway through and left to rest for around 15 minutes after cooking. It came out perfectly and had really good flavour. It is a lean joint so definitely benefits from basting. Would definitely buy again.
Tender beef
I cooked for hour and 30mins after sealing in frying pan first to brown wrapped in foil rested for hour in foil in a warm place. was lovely, juicy tender. will buy again.
just okay
Cooked as per instructions. Joint cost £11. It must have cost that in electricity to cook it. Taste okay. Would not buy again, however.
