Serving Suggestion
For a vegetable stir fry add sliced leeks to a wok with some chopped peppers and mushrooms, add a dash of soy sauce and seve with noodles.

These leeks are a fixture on my weekly shop, and they can transform so many dishes, especially when you feel peeling and chopping an onion is a stretch too far after a long and stressful day! Leeks in white sauce are a family favourite, and for that, I cut them into about 2cm slices, and cook them in a little dry white vermouth in a small pan with the lid on (white wine would do here or, indeed, water) before draining them, adding the leeky liquor to some milk, and when the white (or cheese) sauce is made, just stir in the tangle of leeks. I also love them cut into about 6cm logs and roasted, either by themselves, with red peppers and olives, or with the addition of chicken. But I often just halve a leek lengthwise then slice each half finely to use in place of an onion in a risotto, a stew or soup." Nigella Lawson

Instructions
- Trim the root and cut off any dark green tops. Cut in half lengthways and hold under running water to clean.
- Slice.
- Heat a knob of butter in a frying pan and saute the leeks for 3-4 minutes, keeping them moving to prevent burning.
- Steam or boil in a pan or steamer for 8-10 minutes or until tender.

Better avoid at the moment
A lot to be thrown away.Instead of the usual 3 medium leeks, two very thick ones, where half of it is green and woody, even a lot of the white layers are Woody. On medium and small it might be possible to use the green, in this ones almost two thirds of each to the bin.
Usually very good
These have been consistently good throughout winter, purchasing weekly. This week, old, floppy, tough and covered in soil. By the time these were trimmed there wasn't much left to eat.
Worst leeks ever
Really small, about 2 cms of white, the rest dark green and inedible. Salvaged 150 gms out of packet.
Excellent quality
Nicely trimmed with very little dirt & grit. Cooked off with cabbage, butter & chicken stock to accompany a gammon joint.
yellow and wrinkled
Ive had these before and theyve been fine But this time I ended up throwing half away, the outer leaves were really odd looking , very pale and wrinkledthey just looked as if theyd been hanging around for months .
